“Pudding” is one of the most delicious parts about living in the Solomon Islands! 🇸🇧 🏝️ For the SITAG Christmas party, I decided to make some. It is quite labor intensive, but so worth it! For those who have never heard of it or ever tried it, it has the consistency of the mix between cornbread and jello! Ha! But it tastes nothing like either.

First you have to purchase the ingredients from the market.

2 bundles of dry coconuts 🥥 $40 SBD (about $5 US)

2 bundles of Coconuts and four heaps of cassava.

Next you have to “scratch” the coconuts.

Asher did 1.5 coconuts, Anna did 10.5 coconuts, and Vicki did 9 coconuts, for a total of 21! That’s a lot of coconut cream!

Next you have to “scratch” the cassava.

Lesma and I did most of the scratching. She had no cuts on her hands, of course. I, however had several!

The “scratchers” are basically metal sheets with nails pounded in them to make holes, and you rub the root vegetable, cassava, over the rough surface to make a pulp. Then you squeeze out some of the juice, add in the coconut cream, and press it into a pan, which then goes into the motu, an “earth oven” made of river rock that has been heating in a fire for several hours.

I had lots of help getting the pudding into the motu, and lots of help eating it!

Christmas Party dance

The Christmas Party was fun! We swam, we ate, and we talked and laughed. There were two dances preformed and presentations made by students and staff. It was a lovely day (except for the “sea lice”, but that’s a post for another day)!
